Tasty Pan Seared Tuna Steaks with Rosemary Garlic Sauce, a fast, easy way to prepare tuna with bold and delicious flavor.
Salt and Pepper the tuna
In a frying skillet large enough to hold the 4 tuna steaks, add the olive oil, garlic and rosemary. On a lively flame, sauté until the garlic turns golden. Spread the mixture evenly on the bottom of the pan, place the tuna steaks on top of the garlic, rosemary oil. Sear on both sides until the tuna is golden brown on both sides.
Once the tuna is golden, remove from the pan
Carefully add wine, then the fresh lemon juice. On a lively flame scrape the brown bits with a spatula from the bottom of the pan, mixing with the wine and the lemon juice. Cook until the juice reduces about 2-3 minutes.
Re add the tuna, turning it so the pan juices adhere to the tuna steaks. Continue cooking the tuna until it reaches your desired temperature. Re adjust salt and pepper. Serve either hot or at room temperature.
