A easy dish for entertaining, sweet and spicy sausages served on a bed of gently sauted peppers and onions.
Cut the peppers in half, core, then slice along the length in thin strips, place in a large bowl
Cut the onions in half and thinly slice the onions, place in the bowl with the peppers
In a large frying pan, add the olive oil and smashed garlic cloves, heat the oil and lightly brown the garlic, Salt and Pepper to taste
Add the pepper, onion mixture to the pan, on a medium heat, gently saute the peppers and onions until softened, approximately 15 minutes.
Adjust salt and pepper, add in chopped basil and oregano (optional)
On a grill or grill pan, grill the sausage until cooked through and golden brown.
Serve the sausage placed on top of the peppers and onions
