Wonderful Winter Vegetable Soup with Barley, Pressure Cooker Version, a healthy, easy soup starring winter vegetables made in no time at all.
In a pressure cooker, add olive oil, garlic and hot pepper flakes, lightly brown the garlic
Add all the chopped vegetables, cover with broth
Generously salt and pepper to taste
Seal the pressure cooker
Cook under pressure 30 minutes.
If cooking conventionally bring to boil, then simmer until all vegetables are soft about 1 hour
Serve hot or at room temperature
