Ingredients

  • 2 Leeks, sliced
  • 1 cup Barley
  • 8-10 cups Vegetable or Chicken broth
  • 8 medium Carrots, chopped
  • 4 stalks Celery chopped
  • 2 cups Butternut squash, cubed
  • 3 cups Kale, chopped
  • 2 cups Mushrooms, sliced
  • 4 medium Plum tomatoes chopped
  • handful Parsley, chopped
  • 4 cloves Garlic, crushed
  • 2 tbls Extra virgin olive oil
  • Hot pepper flakes, to taste
  • Sea salt and fresh ground pepper to taste

Instructions

  1. In a pressure cooker, add olive oil, garlic and hot pepper flakes, lightly brown the garlic

  2. Add all the chopped vegetables, cover with broth

    Generously salt and pepper to taste

    Seal the pressure cooker

  3. Cook under pressure 30 minutes.

    If cooking conventionally bring to boil, then simmer until all vegetables are soft about 1 hour

  4. Serve hot or at room temperature
