Shrimp Catalana

A lovely, light, fresh salad with Shrimp, tomatoes and onion

Ingredients

  • 1 lb Shrimp, fresh if available
  • 1 lb Tomatoes, either cherry or baby plum
  • 1 large Red Onion
  • 1 stalk Celery
  • 1/2 Carrot
  • 2 large Lemons
  • 1/2 tsp peppercorns
  • Sea Salt and Fresh ground pepper
  • 3 tbls Extra virgin olive oil
  • 1 Bay leaf
  • Flat leaf Italian Parsley (to taste, optional)
  • 2 tbls White wine vinegar

Instructions

  1. Peel and Cut the red onion in half, slice into thin rings.  Place the rings in a bowl of cold water and add 1 tbls vinegar, soak for at least 20 minutes

  2. Peel and devein the shrimp, set aside

  3. In a pot large enough to hold the shrimp, fill with cold water, add the celery, carrot, 1/2 lemon, peppercorns and sea salt, bring to boil

  4. When the water comes to a boil, add the shrimp, cook for 3-4 minutes, until the shrimp turns white, drain and cool

  5. Chop the tomatoes, add to a serving bowl, strain the onions, add to the tomatoes, add the shrimp

  6. Add the juice of remaining 1 1/2 lemons, 1 tbls vinegar,  olive oil, salt and fresh ground pepper, adjust salt

  7. Serve and enjoy with a generous sprinkle of chopped fresh parsley
