Baby Basil Burgers with Cucumber and Tomato Salad
- 1 lb Ground veal, or lean ground beef of mixture of both
- 2-3 Garlic cloves, crushed
- 1/2 cup Grated Parmesan cheese
- 1/2 cup Breadcrumbs, good quality
- large handful Fresh basil leaves, stems removed
- Salt and pepper to taste
- 2 large Tomatoes, beefsteak or heirloom, sliced
- 1 long English cucumber or 2 thin long cucumbers peeled and sliced
- Extra virgin olive oil
- Finishing salt
In a blender, or using a handheld immersion blender and it's mixing bowl, add the eggs, garlic, basil leaves and salt and pepper blend together until basil is completely blended and liquid.
In a separate mixing bowl, add the ground meat, Parmesan cheese, breadcrumbs. Pour the liquid egg, basil mixture into the meat and mix well being careful not to overwork the meat
When mixture is combined and holds a shape (note, if the mixture is too moist, add either more cheese or breadcrumbs or combination of both) form small patties
Grill until you reach your desired doneness.
Serve with a side dish of sliced tomatoes and cucumbers dressed with olive oil and finishing salt.
