Since zucchini is abundant in these summer months, it is nice to have lots of easy cooking ideas for this versatile vegetable. The most difficult part of this recipe is slicing the zucchini into long strips! With few ingredients zucchini, garlic, mint, olive oil and a grill or grill pan, you can create a wonderful summertime side dish.

Grilled Zucchini with Mint and Garlic Infused Olive Oil
Ingredients
- 4-5 Medium Zucchini squash
- 3 tbls Extra virgin olive oil
- Large handful Fresh mint
- 2 Garlic cloves
- Finishing sea salt
Instructions

In a small bowl, add the olive oil, garlic cloves (whole) and chopped mint, allow this to sit so the oil absorbs is infused with the mint and garlic, can be made ahead

Rinse the zucchini, cut of the stem. Slice in 1/4" thick slices lengthwise

If using preheat a gas grill, on direct heat, turn to medium low, lay the zucchini side by side on the grill. The zucchini will release from the grill and have grate marks when cooked, about 5-8 minutes per side. Turn carefully as to not rip the zucchini.

Place the cooked zucchini on a platter, drizzle the minted oil on the zucchini then sprinkle with finishing sea salt.
Can be served hot or even better at room temperature
