I saw a virtual video version of this recipe and it inspired me to give this recipe a try. A dish that is easy to prepare for a “Meatless Monday. If you are in a hurry, use a high quality prepared tomato sauce, if not, make your own using my simple tomato sauce recipe here on the blog. Rolled Stuffed Zucchini Parmesan Packets
Rolled Stuffed Zucchini Parmesan Packets a delicious parmesan variation using zucchini stuffed with ricotta cheese, rolled and topped with mozzarella.
- 2 medium-large Zucchini
- 1 1/2 cups Ricotta cheese
- 2 cups Simple tomato sauce (see blog) or prepared high quality tomato sauce
- 1 clove Garlic, crushed
- 1 cup Mozzarella cheese, chopped
- 3/4 cup Imported Parmesan cheese grated
- handful Fresh basil, chopped
- Salt and fresh ground pepper to taste
- 2 tbls Breadcrumbs, finely grated
- 1/2 cup Parmesan cheese for topping
In a small mixing bowl, add the ricotta cheese, egg, garlic, parmesan cheese, chopped basil, breadcrumbs, salt and pepper, mix well. Mixture should hold a light shape, not be runny if so, add more breadcrumbs or parmesan cheese. Set aside
Rinse and cut the stems off of the zucchini
Lay the zucchini on a cutting board, with a vegetable peeler, begin cutting lengthwise along the zucchini, cut the zucchini into thin strips
Using a baking dish, spread a layer of tomato sauce on the bottom of the dish
Overlap the strips, using 3 or 4 to create a lasagna shape, fill each of the zucchini strips with a large tablespoon of the filling mixture. Carefully roll the zucchini into packets
Lay the packets in the baking dish prepared with the sauce, placing the packets in rows.
Top the zucchini packets with remaining sauce, mozzerella cheese and parmesan cheese
Bake in a 350 F oven for 20-30 minutes, until the top is golden brown and bubbling.
Let sit up for at least 10-15 minutes before serving
