Italian Style Chunky Chicken Minestrone Soup
A delicious east to make chicken vegetable soup....Italian Style, Minestone
- 1 lb Chicken filet tenders
- 1 cup Ceci, garbanzo beans, drained
- 1 cup Butternut squash, cubed
- 3-4 cups Baby spinach
- 2 stalks Celery, chopped
- 4 Carrots, chopped
- 4 small Zucchini, chopped
- 1 small Cabbage, chopped
- 2 large Garlic cloves
- 8 cups Chicken broth
- large handful Chopped Italian flat leaf parsley, chopped
- Sea salt and fresh ground pepper to taste
- Imported parmesan cheese
Add all ingredients above, chopped to your liking in a large soup pot
Pour in the broth
Add salt, pepper and parsley
Bring to a boil, turn to simmer and cook until the vegetables are soft, about 45-60 minutes.
Recheck salt and serve with parmesan cheese
