Fast, Easy Chicken Noodle Soup, Make it Yourself!
A fast, easy, healthy Chicken Noodle Soup that you can make in less than an hour!
- 1 lb Chicken tenders of boneless, skinless chicken breast meat
- 1/2-1 Leek
- 5-6 large Carrots
- 5-6 stalks Celery
- large handful Fresh Baby Spinach
- 8 Cups Chicken Broth
- 1/2 lb Linguine imported
- Sea Salt and Fresh Ground Pepper to taste
In a soup pot or a pressure cooker
Cut the leeks in half lengthwise, rinse well, slice in 1/4 in slices, add to pot
Scrub carrots, cut in half lengthwise cut into 1/4 slices, add to pot
Rinse celery, if the celery is wide, cut in half, then cut into 1/4 slices, add to pot.
Slice the chicken into bite size pieces, place into pot
Add baby spinach to the pot, pour the broth over all the ingredients. Salt and pepper to taste. Bring to boil, turn down and let simmer until vegetables are soft and chicken is cooked
If using a pressure cooker, cook under pressure for 20 minutes.
In a separate pot, bring water to boil, break the linguine in half while still in its packet, cook the linguine to 1 minute less than package indicates for al dente. Drain, set aside until soup in finished
Add noodles to the soup and serve
