The Modern Wedge Salad for a Crowd, here is a salad that is really great, and fun to serve for a crowd. Assembly time is minimal, crunch appeal is optimal. I love serving this salad in a shallow platter, all the lovely toppings; tomatoes, red or white onions, black olives, radishes, cucumbers, then chunks of blue cheese with crispy bacon to finish all covering the crunchy wedges of lettuce, just the perfect salad. For an easy dinner with friends, I served this salad with grilled veal chops along with Potato Salad French Onion Style. The Modern Wedge Salad for a Crowd
Great to serve for a crowd, a crunchy, salad topped with all kinds of lovely toppings
- 2 heads Iceberg or ( Brasiliana ) Lettuce
- 1/2 lb Center cut bacon
- 1 large English, seedless cucumber
- 8 large Radishes
- 1 cup Chopped black olives
- 1 medium Red or white onion
- 2 Heirloom or beefsteak tomatoes
- 1/4-1/2 lb Blue Cheese, i.e. Maytag
- 4 tbls Extra virgin olive oil
- 2-3 tbls White wine vinegar
- Salt and fresh ground pepper to taste
Rinse and remove the outer leaves of the head lettuce. Cut into wedges, leaving the core intact either in quarters or eighths.
Place in a serving platter preferably one with raised sides
Chop the onions the black olives, thinly slice the radishes and cucumbers, cut the tomatoes in quarters and thinly slice, toss all ingredients on top of the lettuce wedges, ensuring to cover the lettuce evenly
Bake, microwave or fry the bacon until it is crisp, cut into 1/4" pieces. Sprinkle on top of the lettuce and vegetables.
Crumble the Blue cheese and sprinkle the salad
When ready to serve, mix the vinegar and oil, generously salt and pepper (to taste) the salad. Pour the dressing over the top.
Serve with large spoon and fork, trying to keep the wedges intact
