Sweet and Sour Red Onions, Cipolle di Tropea in Agrodolce, just in time for a Christmas side dish. These delicious sweet and sour, agrodolce, onions are a great accompaniment to any roasted poultry or meat. My good friend Valeria, served these sweet and sour onions along with other roasted and grilled vegetables on a large platter at her annual Christmas party, what a great idea! In Italy there are lovely red onions from Tropea Calabria, called Cipolle di Tropea, these onions are seasonal and sacred and sometimes difficult to find. For this recipe if Tropea onions are not available, they can easily be substituted with red onions. Sweet and Sour Red Onions, Cipolle di Tropea in Agrodolce, let’s cook!
Sweet and Sour Red Onions, Cipolle di Tropea in Agrodolce
Red onions sauted slowly in a sweet and sour sauce, great to serve with roasted meats or poultry, or as a accompaniment to cheese
- 2 lbs Red Onions
- 1 1/2 cups Water
- 1/2 cup White wine vinegar
- 1 tbls Balsamic vinegar
- 1 1/2 tbls Sugar
- 2 tbls Extra virgin olive oil
- Salt and pepper to taste
Thinly slice the onions
In a large measuring cup add the water, wine vinegar, balsamic vinegar and sugar, stir. set aside
In a non stick skillet add the onions and the olive oil, on a low heat, saute until the onions start to soften, pour the vinegar sugar liquid over the onions, salt and pepper.
Cook until all the liquid is absorbed and the onions are soft. Adjust salt and pepper. Approximately 20 minutes.
Serve, hot, or room temperature. A great recipe to make in advance
