The Best Crunchy Oven Baked Chicken, and it really is.  This easy, delicious recipe, I discovered by chance while watching an Italian cooking program, Prova del Cuoco, where a guest host was making this chicken dish, she called “Pollo all’ Americana”.  Even though it is called “American Chicken”, there are many components of this recipe that are commonly used in the Italian kitchen,  parmesan cheese, lemon, garlic and olive oil, to name a few.  The chicken is marinated in  lemon, garlic and cheese, then shaken with bread crumbs and corn meal, so simple but really filled with tons of flavor.  Baked in the oven, when it is finished and  golden brown, you have The Best Crunchy Oven Baked Chicken!  Let’s Cook!

The Best, Crunchy Oven Baked Chicken

This delicious chicken dish is marinated in  lemon, garlic and cheese, then shaken with bread crumbs and corn meal, so simple but really filled with tons of flavor.  Great as an appetizer too!

Ingredients

  • 2 lbs Chicken, cut and cubed, breast meat or thighs
  • 1 1/2 lemons (juiced)
  • 2 lg Garlic cloves crushed
  • 1/2 cup Imported parmesan cheese grated
  • 4 tbls Bread crumbs
  • 3 tbls Corn meal
  • handful Flat leaf parsley, chopped
  • 3 tbls Extra virgin olive oil
  • Seasoned Salt
  • Sea Salt and fresh ground pepper to taste

Instructions

  1. Cut the chicken into bite sized or larger pieces, put into a mixing bowl add lemon juice, crushed garlic, parmesan cheese, olive oil and seasoned salt, mix well. Refrigerate

    Let marinate at least 6-8 hours or overnight

  2. Remove the chicken from the refrigerator, using a strainer, drain the excess liquid.

  3. Using a large plastic bag, add the bread crumbs and corn meal, add the chicken chunks to the bag, seal and shake until the chicken is coated on all sides with the breadcrumb mixture.

  4. On a baking sheet or pan lined with either parchment paper or aluminum foil pour the chicken onto the pan.  Spray or drizzle with olive oil.

  5. Bake in a preheated 400F, 200C oven for 20 minutes until the pieces are golden brown, remove from oven and sprinkle with sea salt.

    Serve hot, can be skewered and served as appetizers too!
