Autumn Chicken Salad with Radicchio, Red Grapes and Fennel.  What a wonderful salad to welcome the Fall Season.  This chicken salad is filled with fall’s seasonal splendors, grapes, pomegranate, fennel and walnuts all tossed with a balsamic vinegrete. Like it’s “sister” salad, Chicken Salad Mediterranean Style, both these salads have unique flavor combinations and the chicken breasts are cooked in the same manner, pan roasted.  An easy meal to create, this salad is a lovely lunch or dinner entree salad, Autumn Chicken Salad with Radicchio, Red Grapes and Fennel.  Lets Cook!

Autumn Chicken Salad with Radicchio, Red Grapes and Fennel

Autumn Chicken Salad with Radicchio, Red Grapes and Fennel.  What a wonderful salad to welcome the Fall Season.  This chicken salad is filled with fall's seasonal splendors, grapes, pomogranates, fennel and walnuts

Ingredients

  • 2 Chicken breast halves, or whole breast without skin Should yield 3 cups of shredded meat if you want to use a rotisserie chicken
  • 3 cups Radicchio, long if available Tardivo or Treviso if not Belgian endive or round radicchio
  • 1 Pomegranate
  • 1 Fennel Bulb
  • 3/4 lb Seedless red grapes
  • 1 cup Walnuts, shelled
  • 3-4 Spring onions, or 2 knobby onions
  • 1/2 cup Chopped parsley
  • 4 tbls Extra virgin olive oil
  • 2 tbls Imported balsamic vinegar
  • 2 tbls White wine vinegar
  • Red peppercorns crushed (optional)
  • Sea Salt fine ground
  • Crumbled blue cheese (optional)
  • Seasoned salt/pepper mixture i.e. Montreal Chicken

Instructions

  1. In a non stick skillet add seasoned salt mixture, place the breasts on top of the mixture cover with a lid and cook for 12-15 minutes, turn and cook the other side for 12-15 minutes, take off the heat and let cool, when cool, shread of cut the chicken into bit sized pieces

  2. Clean and chop the radicchio, add to a salad style serving bowl

  3. Cut the pomegranate in half with a wooden spoon over a bowl, hit the back of the pomegranate to release the seeds, remove the white pulp, add the seeds to the radicchio 

  4. Clean and cut the fennel bulb in into quarters, slice each quarter thinly add to the salad

  5. Cut the seedless grapes in half and add to the salad

  6. Clean and thinly slice the spring onions,  include the green part of the onion add to the salad

  7. Chop the walnuts add to the salad and crumbled blue cheese (optional)

  8. Add the shredded chicken, the olive oil, the vinegars, salt and crushed pepper (use a mortar to crush the red pepper) toss in the parsley, mix well

  9. Serve and enjoy
