This pasta dish evolved from one of my go to side dishes, broccoli with garlic chips, hot pepper and browned breadcrumbs. Today’s dish is steamed broccoli sautéd with garlic and hot pepper infused oil with smoked pancetta, a flavorful topping for rigatoni, penne, or any full bodied shaped pasta. Pasta with Broccoli, Pancetta, Garlic Chips and Hot Pepper
This is a great fall pasta dish with lightly browned garlic cloves, hot pepper and pancetta
- 2 heads Broccoli
- 6-8 cloves Garlic
- 6 tbls Extra virgin olive oil
- 4 slices Smoked pancetta or bacon
- piece Hot pepper (to taste)
- 1 lb Rigatoni, penne or full bodied pasta, Imported
- Sea salt and freshly ground pepper (to taste)
- 3/4 cup Imported parmesan cheese
Peel and thinly slice the garlic, in a small skillet add 4 tbls olive oil, add the garlic making sure to spread the slices evenly and flat in the pan so the garlic browns evenly, like little chips. Remove from heat and set aside
Chop the pancetta/bacon into thin slices widthwise. In a wok style skillet, large enough to finish off the pasta, add the pancetta, hot pepper(to taste) and 2 tbls of olive oil. Render the pancetta until it is golden and cooked.
Using only the florets of the broccoli, place in a large pot, fill the pot with cold water, salt, cover and bring to a boil, cook until a fork is easily inserted into the stems. Approximately 10-15 minutes. With a slotted spoon remove the broccoli from the water, draining, and place in the pan with the pancetta. Reserve the broccoli water for the pasta
Add more water to the water you used to boil the broccoli, bring back to full boil, salt the water, add the pasta and cook 1 minute less than the package indicates for al dente
When the pasta is cooked, again with a slotted spoon, lift and drain the pasta from the water and add to the large pan with the pancetta, finish off the pasta and pancetta on a lively heat stirring, add the garlic chips and the infused olive oil, continue stirring, add the parmesan cheese, note, if the mixture seems dry add a little of the pasta water. Serve immediately.
