Pasta with Prosciutto in Pink Sauce

Pasta with Prosciutto in Pink Sauce, one of my very favorite pasta dishes.  This flavorful pasta, has the saltiness of the prosciutto, combined with tomato sauce and  light sweetness of fresh cream.  The addition of  fresh cream gives the sauce  it’s beautiful pink hue , the more cream ,the pinker the color and the sweeter the sauce.  We also adore this sauce with the addition fresh spring peas.  You might have already enjoyed the marriage of peas and prosciutto in the “sister recipe” Pasta with Prosciutto and Peas in Bianco (White sauce), here on the blog.  Either way,  Pasta with Prosciutto in Pink Sauce or a White Sauce with Peas both are worth trying and delicious!  Let’s Cook!

Pasta with Prosciutto in Pink Sauce

A delicious pasta sauce with the saltiness of the prosciutto and the creamy sweetness of the tomato cream sauce

  • 1/4-1/2 lb Prosciutto sliced
  • 1/2 Sweet onion
  • 2 cups Tomato sauce
  • 2 tbls Extra virgin olive oil
  • 1 lb Pasta, penne, rigatoni, imported
  • 3/4 cup Parmesan cheese, imported
  • 1/2 tsp Sugar
  • 1/2 cup Fresh Cream (add more if you want a pinker sauce)
  • Sea salt and fresh ground pepper to taste


  1. Finely chop the onion, stack the prosciutto slice along the width making thin ribbons

  2. In a wok style skillet, large enough to finish off the pasta, add the olive oil with the chopped onions, on a low heat saute until the onions become translucent, add the prosciutto and continue to saute until the prosciutto renders some of it's fat.  

  3. Add tomato sauce, sugar, salt and pepper (to taste), cook on a low heat, let simmer until tomato sauce and prosciutto incorporate about 5-8 minutes.  Take off heat, add cream and mix well (if you would like the sauce pinker, add more cream)

  4. In a pasta pot, fill with water, bring to rolling boil, add sea salt then pasta.  Cook for 1 minute less than package indicates for al dente

  5. Place the sauce back on the heat when the pasta has 2-3 minutes remaining cooking time, when the pasta is ready, using a large straining spoon, remove pasta from the boiling water, drain as you scoop, and add the pasta to the sauce, mix well, if the pasta seems dry, add pasta cooking water, add the parmesan cheese, adjust pepper and continue the last minute of cooking.  Serve hot
